It’s a beautiful day in Fort Collins! 65 and sunny! The beautiful day had me craving a fresh tasting lunch, so I turned to this delightful recipe from Two Peas & Their Pod. It’s such an easy dish to throw together for lunch and it combines so many of my favorite flavors, like lime and cilantro. And this salad is gluten free and vegetarian!
First I assembled all the ingredients. Chick peas, cilantro, feta cheese, avocados, and a lime!
I chopped everything up,
(Clare always seems to magically appear when I cut open an avocado)
Threw everything in a bowl,
Sprinkled some lime juice on top, and mixed it all together.
So easy, right!?!?! I served it up to the little monkey with some blueberries and grape tomatoes.
Success!
Rob loved it too! (Or at least humored me for a photo…good man)
And it’s all gone…:(
