5 Nights of Delicious Vegetarian Meals

I always plan our dinners for the week before going grocery shopping. I’ve found that this saves us money and helps me be more organized throughout the week instead of trying to throw something together for dinner at the last minute. I usually make 5 full-on dinners and we eat leftovers on the other two nights.

I’m not a vegetarian (can’t give up burgers, sorry not sorry), but Rob and Clare are, so the meals I make are always vegetarian. I also do my best to make sure we’re getting plenty of variety and lots of veggies.

Here’s what we’re eating this week:

This might be my only post this week. We have so¬†much to do before we move to the farm on Friday. We are very lucky, though, because Rob’s dad flew in tonight to help us out! He and Shannon, Rob’s sister, are both going to road trip with us down to the farm. We are so grateful for their help.

It’s a beautiful day in Fort Collins! 65 and sunny! The beautiful day had me craving a fresh tasting lunch, so I turned to this delightful recipe from Two Peas & Their Pod. It’s such an easy dish to throw together for lunch and it combines so many of my favorite flavors, like lime and cilantro. And this salad is gluten free and vegetarian!
